FRIED PLANTAIN WITH CHEESE
Recipe (1 serving):
Peel the plantain and fry it in a pan with a little oil over low heat. Finely dice onion and tomato. Put oil in another pan and sauté the onion. When the onion is translucent, add the tomatoes and continue frying.
Take the plantain out of the pan and mash it with a cutting board. Then return to the pan until golden brown.
Grate the Costeño cheese and season the sauce with salt and pepper.
Arrange the patacón on a plate and spread the sauce on top, then the cheese.
This dish is perfect as an appetizer.

1 plantain (green)
80g of Costeño Bajo Grande cheese
1/4 onion
50g cherry tomatoes
oil
salt
pepper
